As far as I know you will hardly hear the difference and if you happen to manage AAC will probably do better. I can't say if it is my imagination or not, but I am converting a library that is a combination of 128, 256 and 320 AAC mostly encoded via itunes into 265VBR mp3 through LAME - although I am not noticing a difference in "loudness", the music definitely sounds better.
256 KBit AAC will be better quality than 320 KBit mp3. Headphones (full-size) ... (lossy to lossy) MP3 files. Theres also the problem that the encoder that was used plays a role – 320 mp3 encoded with a rubbish encoder isnt as good as 320 mp3 encoded with a very good encoder.
